Deceptively Creamy Broccoli and Cauliflower Soup

So I had an inspirational moment last night. I saw an awesome blog post about a asparagus soup. Unfortunately I didn't have asparagus or most of the other ingredients. I also decided that I wanted the soup to be more filling since it was supposed to be for supper and so this little recipe was born.

Delicious and Nutritious Soup

This soup is a thick broccoli and cauliflower soup with potato used to make it heartier. It's also really healthy and almost vegetarian (all you have to do is substitute one ingredient). I warn you, you might not want to make this recipe the first bite is good but by the end of the bowl you'll be hooked and suddenly you've eaten the entire pot.

Ingredients:
- 1 onion (I used red but white will be delicious too)
- 1 Tbls. Butter (used to cook onions)
- 3 Tbls. Olive oil
- 2 cloves of garlic
- 2 potatoes
- 4 cups of broth (I used half beef half chicken but all chicken or all beef or vegetable would work fine too) 
- 500g of cauliflower and broccoli (you can cut fresh or buy a bag of pre-cut from the store like I did)
- 1/3 cup Milk (1% is what I used but it's mostly for colour)
- 3 Tbls. Butter (added at the end of the recipe)

Creamy Broccoli and Cauliflower Soup
To make this soup you start by peeling and cutting 2 potatoes and mincing 2 cloves of garlic (optional cutting your fresh cauliflower and broccoli). Then you need a large pot even though the recipe only makes about 3 qt. your going to want to cook it in a 6 qt. pot.  To that pot your going to add and heat 1 Tbls. of butter with olive oil until the butter has melted (do this on a medium temperature so the oil doesn't get angry and jump out of the pot at you).  Then add the onion to the pot and saute it for about 5 mins until it's gotten soft. Once the onion is happy add your broth, minced garlic and the cut potatoes. Turn the burner to max heat and bring the mixture to a boil. Once it's boiling set a timer for 20 mins and turn it down to medium heat again keeping it bubbling. Once you have 7 mins left on your timer add the cauliflower and broccoli to the mixture (This is going to stop your mixture from boiling. If you need to turn the burner back up to bring it back to a boil). Once your timer goes off pull the mixture off the stove. All the veggies should be cooked through by now. Using a potato masher or immersion blender puree the mixture until it's relatively smooth. Then add milk and butter. I know that some people will be tempted to leave out the butter but you need a little fat with vegetables to keep you full for more than an hour so don't skip this step (it's not very much butter for such a large pot). Once the butter is melted your soup can be garnished with some cheddar cheese and you're ready to eat. I hope you enjoy it as much as I did.

My List of Resolutions For 2013 And What I Resolve To Do Less Of

     This post was inspired by Dinner: A Love Story. They list a bunch of resolutions about different parts of their lives. Mine are less ambitious but I hope I can accomplish them by this time next year and I hope this New Year allows you to accomplish all your resolutions.

What I Resolve To Do:
-Write more for this blog and in general (I've been slacking)
- Get more cookbooks to read and cook from
- Cook with more mushrooms ( I love them and need to add them to more recipes)
- Sign up for a yoga class this summer

What I Resolve To Do Less Of:
- Worrying about things that I can't control mostly about things being perfect before I let other people see them
- Mothering the people around me who take advantage of the fact that I do to act like children ( I'm looking at you roommate who wiped a dirty knife on an oven mitt while cooking then replaced it in the knife block)
